Sweet Chili Shrimp and Snap Pea Stir Fry



Today I was shopping at a supermarket that had its Grand Opening.  I was so excited when I saw their awesome fish counter.  They had these amazing looking Jumbo Wild Caught Shrimp so I had to buy them. Now I had to figure out what to do with these awesome shrimp.

As I have told you all before I have a friend who has a food blog as well, she is known as  The Food Yenta, check out her site it is really great!  A few weeks back she posted a great little recipe for sweet chili sauce which can be used for a variety of different reasons.

The chili sauce she made popped into my mind.  So, I texted her and she was so nice to give me the ingredient list while I was shopping.  Next, I had to figure out what veggie to use and the first thing that popped into my mind was Snap Peas, god how I love Snap Peas!
I doubled the recipe and changed some of the amounts of ingredients for the sauce so it would not be as thick as a dipping sauce would be.  I added some sesame seeds as well.

Here is what you'll need:

For the sauce:
1 1/4 cup rice vinegar
1 cup sugar
3 dried chili peppers, minced (you can use less if you don't like it spicy)
8 cloves garlic minced
3/4 cup water
5 tbsp sherry
1 tbsp sesame seeds
3 tbsp corn starch mixed with 6 tbsp cold water.



For the stir fry:
1 lb cleaned shrimp
1 bag of snap peas

In a sauce pan add all the ingredient's except the corn starch and water mixture.  Bring that to a boil and let it cook down about half.  This will take about ten minutes.




Now add cold water to the corn starch and mix.


Next add the corn starch mixture to the boiling sauce. Whisk together and then take off the burner.  This is when I added the sesame seeds.



In a fry pan heat up some sesame oil and add the shrimp and snap peas.





Saute the shrimp and snap peas for 3 - 4 minutes covered and then flip the shrimp and saute for another 3 - 4 minutes covered.


Now add the sauce to the shrimp and snap peas and mix.


Serve over white rice.


One mistake I made was pouring all the sauce over the shrimp and snap peas.  The next time I make this and I will definitely make it again.  I will place some shrimp and snap peas over the white rice and then spoon about 3 tablespoons of the sauce over it.  This sauce is so flavorful that it can go a long way.
