I love Banana Bread and I already posted my "staple" Banana Bread. I had 3 very ripe bananas and needed to make something with them so, I started looking for a new recipe. I found this great recipe on a blog called http://www.justamomha.com/ its a cute blog that has some low fat and low cal recipes.
This particular recipe is low fat as it substitutes butter or oil with applesauce.
Here is what you'll need:
- 2 cups sifted flour
- 1 cup sugar
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Baking Soda
- ½ teaspoons Salt
- 3 whole Ripe Bananas
- 2 whole Eggs
- ¼ cups Honey
- ½ cups Natural Applesauce (i used cinnamon applesauce)
- ¼ cups Water
FOR THE TOPPING:
- 2-½ Tablespoons Packed Brown Sugar
- 2 Tablespoons Sugar
- 1 teaspoon Ground Cinnamon
Combine the flour, sugar, cinnamon, baking soda, and salt.
In a separate bowl combine the eggs, applesauce, honey, and mashed bananas.
I like to place the ripe bananas into a large zip lock bag and mash the while in the bag...this alleviates a very big mess.
Mix the wet ingredients into the dry ingredients. Make sure you mix well. Now add to a well greased loaf pan. I used spray Pam to grease the pan.
Now combine the topping ingredients together.
Now sprinkle the topping over the batter which is in the greased loaf pan.
Bake at 325 for 1 hour and 20 minutes. Make sure the loaf is done by sticking a tooth pick through the center. If the toothpick comes clean your loaf is done baking.
Voila! Its done and low fat too!!!!
Since there was applesauce in this recipe it alleviated any fat like butter or oil so that makes this recipe HEALTHY!!!!
