Lasagna Roll-Ups


This dish is so easy and what is great about it is you will have left overs that you can freeze and take out on a busy night that you would normally just get take out.

Here is what you'll need:


  • 1 box Lasagna Noodles
  • Tomato sauce ( i made a quick pot of sauce to go with this) but jarred sauce would be fine as well
  • 1 container of Part Skim Ricotta Cheese
  • 1/2 cup Parmesan cheese
  • 2 packages shredded Part Skim Mozzarella Cheese
  • 1 egg
  • 1/2 tsp Basil
  • 1/2 tsp Oregano
  • salt and pepper




Bring a large pot of salted water to a boil and cook the lasagna noodles according to the instructions on the box.





In the meantime add the container of ricotta cheese as well as the egg, parm cheese, salt and pepper





This is jarred Basil and Oregano.  I always keep this in the house.  It is great and works almost as well as fresh herbs. Of course I prefer fresh herbs but I don't always have them in the house so I just use these.

Add the oregano and basil and stir.



Now add the first package of mozzarella cheese and stir again.

Strain the noodles and let them cool enough for you to handle them.


In a casserole dish spread the tomato sauce.


Now lay the lasagna noodle long ways and spread a heaping tablespoon of the cheese mixture all over the noodle.



Now roll the noodle.



Here is the rolled noodle....look at all that cheese!



Place the rolled lasagna noodle onto the sauce and continue to roll the remaining noodles and cheese.



Now spread some sauce over the roll ups and then sprinkle some mozzarella cheese and Parmesan Cheese.

Bake covered at 375 for about 45 minutes.  Take the aluminum foil off for the remaining 10 minutes so the cheese will melt.



This dish made 20 lasagna roll ups.  I gave 8 of the roll ups in a separate pan to my in laws.


You could always freeze those remaining roll ups for another time!
