Slow Cooker Pulled Pork

As much as I love to cook and be in the kitchen it is sometimes nice to have a dish that does not require much effort. Well folks....this is one of those dishes.

Here is what you will need:

  • 1,  2 1/2 lb Pork Loin
  • 4 cups root beer
  • 1 bottle (or two) of your favorite Barbecue Sauce
  • 4 Fresh Kaiser Rolls

Cut the excess fat off the pork loin.

This is what I cut off , you don't have to but I feel the less fat the better.

Now place the pork into your slow cooker.

Pour the root beer over the pork and cook on low for 5 1/2 to 8 hours.

Once the pork is cooked take it out of the slow cooker.

Using two forks shred the pork with the grain...see below.

Now empty the slow cooker of most of the root beer.  I like to leave a small amount in the bottom.

Mix the shredded pork and the BBQ sauce in the slow cooker set to the low setting and let it heat up for  another hour.

The great thing about a slow cooker is you can't really overcook anything since the temperature really does not get all that high.

Serve on a toasted Kaiser roll.

Voila!  Now if that is not an easy meal I don't know what is!
