Turkey Meatloaf with Quinoa

  • I make turkey meatloaf pretty often and I had been thinking lately that I need to change it up a little.  I was online this weekend looking for some new recipes and found this very different recipe on AllRecipes.com  I know the ingredients seem a little strange but I have to tell you this was really good!!!!

  • Here is what you'll need:

  • 1/4 cup Quinoa
  • 1/2 cup water
  • 1 teaspoon olive oil
  • 1 small onion, chopped
  • 1 large clove garlic, chopped
  • 1 (20 ounce) package ground turkey
  • 1 tablespoon BBQ Sauce
  • 2 tablespoons Worcestershire sauce
  • 1 egg
  • 1 1/2 teaspoons salt
  • 1 teaspoon ground black pepper

  • For the topping:
  • 2 tablespoons brown sugar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon water

Bring the 1/2 cup water to a boil and add the Quinoa.  Allow to simmer covered for 15 minutes.

Now saute the garlic and onions in a hot pan with some olive oil for about 5 minutes or until the onions are translucent.
Set aside to cool.

Now in a large bowl combine the ground turkey, egg, onions and garlic that were previously sauted, cooked Quinoa, Worcestershire sauce, BBQ sauce and salt and pepper.

Combine all these ingredients with your hands and form a loaf in a oven safe pan.

For the Sauce:

Combine the brown sugar, Worcestershire sauce and water in a separate bowl and mix.

Then spread the sauce over the formed loaf.

Bake at 350 for 1 hour.

Slice the meatloaf and serve.

Tonight I served the meatloaf with a sweet potato and
sauted Brussel Sprouts.
