Peanut Butter Chocolate Pecan Biscotti



My husband loves Biscotti and I love him so since it was a yucky day and he had to go out in this nasty weather I wanted to have something yummy for him to come home to.

This recipe is adapted from Joy The Baker, which is a baking blog that I love.  You should check out her blog...she has some great recipes and very easy to follow.

Here is what you'll need:

  • 4 tbsp butter, softened ( half a stick)
  • 1/3 cup peanut butter
  • 1/3 cup cocoa powder
  • 1 cup sugar and some extra for sprinkling on top
  • 1 large egg
  • 1 egg yolk
  • 1 egg white 
  • 1 tbsp milk, for the wash used at the end
  • 2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt


There is my baking Buddy..still in her PJ's at 1:00 in the afternoon!


Have the racks in your oven placed with one on top and the other on the third level.  
Preheat oven to 325 degrees.

Line two baking sheets with parchment paper and put aside.



Combine the flour, cocoa powder, salt, and baking powder in a bowl and mix together.



In a separate bowl combine the butter, sugar and peanut butter.


With a hand mixer beat the sugar, peanut butter and butter until fluffy.  Then add the one egg and egg yolk.


Now beat until fluffy again!


Next combine the batter with the flour mixture and beat on low until combined.


The cookie dough will be dry and crumbly.


Next add the pecans and divide the mixture in half onto the baking trays lined with parchment paper.


Take the mixture and press it together to form an 8 - 12 inch long log that is 1 1/2 inch thick.




Now take the egg wash and spread the wash with a pastry brush all over the cookie.


Now sprinkle some granulated sugar over the whole cookie.


Place each cookie sheet onto it's own rack in a 325 degree preheated oven.


Now you will bake the cookie for 15 minutes and then switch the cookie tray to the opposite rack in the oven and bake again for another 15 minutes.  
The reason for this is to even out the cooking process.

Now remove from the oven and let cool until you can handle the cookie.


Once cool enough to handle, use a serrated knife and cut the cookie into 1 inch thick pieces and place the cut side onto a baking sheet.




Now bake again for another 15 minutes.

Let cool!


There you have a very yummy Biscotti that will go great with a nice cup of Hot Coffee!!!!

My hubby is going to a VERY happy man!
